The Best Peanut Butter Cookies
Happy Friday my friends! Today I wanted to share with you a cookie recipe that will blow your mind! Why? Because they’re made with absolutely NO flour. Yes, you read that correctly. But I promise you, one bite into these Peanut Butter cookies and you’ll totally understand the title of this post!
My husband has been a huge fan of peanut butter cookies for years. Me…not so much. But I have to confess….I have already eaten so many of these peanut butter cookies that I lost count. OMG! I can’t stop!
I’m willing to bet you a whole jar of peanut butter all the ingredients for these cookies is in your kitchen right now. Another reason why I love these cookies. 🙂 Next time when my hubby begs me to make a “quick” baked treat for him, this recipe will be my pick!
These cookies are also a great recipe for kids to try cooking in the kitchen. Since they’re so easy to make, they can almost whip up a batch by themselves! (Just a little help with the oven, of course.) My sons favorite part is using the fork to make the criss-cross pattern. No great peanut butter cookie is complete without that trademark! 😉

The Absolute Best Peanut Butter Cookies {Gluten Free}
Prep Time: 10 minutes Cook Time: 8 minutes
Makes about 30 cookies
Ingredients:
- 1 cup peanut butter
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 1 egg
- 1 teaspoon baking soda
- 1 teaspoon vanilla
- pinch of salt
Directions:
Preheat the oven to 350 degrees. Spray cookie sheets with cooking spray.
Combine all ingredients in a medium bowl and stir together until smooth.
Roll into 1 inch balls and then place 2 inches apart onto prepared cookie sheets. Flatten each ball with a fork, making a criss-cross pattern.
Bake for 8 to 10 minutes in the oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
I loooooove peanut butter cookies with a big ol’ glass of milk! I still don’t have a go-to recipe for them, though, so I need to try these!
I got the urge to makes some cookies. Had all the ingredients to make these and they were great! Easy, flavorful and were disappearing so fast I made another batch.

These are really good and easy. Do they freeze well?
I’m actually not sure, Kim. I have never had the opportunity to freeze any because my husband always devours them! lol But I bet they would.
They are good but they come out a bit to on the soft side. I put them in the fridge after I was done baking them.
