Southwestern Green Chili Egg Muffins

I’ve got to share with you a great go-to recipe that is perfect for dinner
or just a fast snack when hunger strikes.
These egg muffins are packed full of protein and veggies.
Plus they’re a great alternative way to eating eggs.
Oh and did I mention they are super easy to make?
If you know me by now,
you’ll know that all my recipes are easy or I simply don’t make them. 🙂

Southwestern Green Chili Egg Muffins
-6 turkey sausage links
-9 eggs
-half a green or red bell pepper 
-1 cup of spinach
-1 can of green chili
-1/4 teaspoon salt
-1/4 teaspoon black pepper
-1 cup cheddar cheese (shredded)
First, preheat your oven to 350 degrees.
Start by cooking your sausage links in a skillet until cooked thoroughly.
While those are cooking, chop your bell pepper and spinach.
Then in a medium bowl mix the chopped veggies, green chili,
chopped cooked sausages, salt and pepper. Stir to combine.
Coat your muffin pan with cooking spray.
Then evenly distribute the veggie mix into each cup. 

In a measuring cup, beat your eggs. 
Then gently pour over your veggie/sausage mixture,
careful to fill each cup slightly below the rim.
Lastly, top each cup with a pinch of cheese.
Place in the oven and bake for 30-35 minutes.
Make sure eggs are completely set by gently shaking the pan. 
If there is no jiggle, your eggs are done. 

Add some cooked seasoned potatoes and you have a complete dinner
with lots of yum-ness. (Yep, I just said yum-ness. It’s a word.) 🙂

This recipe has started to become a favorite in our house.
