Mini-Cheddar Meatloaves

Serves: 4
Prep Time: 15 min.
Cook Time: 20 min.

1 pound lean ground beef (I have also used ground turkey)
2 large eggs, beaten
3/4 cup panko bread crumbs
2 tablespoons Italian parsley, chopped
coarse salt and ground pepper
1 cup shredded cheddar cheese
3 tablespoons ketchup
1/2 teaspoon garlic salt
4 green onions, chopped

Preheat oven to 450 degrees.

1. Spray a rimmed baking sheet with cooking spray.

2. In a medium bowl, combine beef, eggs, panko, parsley, salt and pepper, and half the cheddar.

3. Form into small loaves (one per serving) and place on baking sheet. Top with ketchup and sprinkle with garlic salt, remaining cheddar and green onions.

4. Bake loaves until they are cooked through, 15-20 minutes. Enjoy!

  2. Wow I love FMBT’s – I just tripped into heaven! I’m a fellow mommy trying to work on my domestic ways, love the recipes! They sound so delish, and I’m going to snag a few to put to the test on the hubs this weekend! Luckily (for my son at least) he’s not even a year yet so he doesn’t have to choke down my food yet! =)
