Chicken Tortilla Soup

Cook Time: 10 min.
Serves: 4

1 (14) ounce can chicken broth
1 cup cooked skinless chicken breast, diced
1 medium onion, chopped
2 ounces (1/2 of a 4-ounce can) diced green chilies
1 1/2 teaspoon chili powder
1 cup corn tortilla chip pieces
1/2 cup cheddar cheese, shredded
1 small tomato, chopped
( optional, 2 cups cooked rice)


1. In a medium saucepan, combine first 5 ingredients. Bring to boil. Reduce heat; simmer uncovered 10 minute, until onion is tender. (Add optional rice now)


2. Ladle into bowls, and 1/4 cup chips to each, and sprinkle each with cheese and tomato. Enjoy!
