S’mores Cookies – The Best Summer Treat

Summer is s’more fun with sweet treats! But don’t worry, no campfire is needed to enjoy these gooey s’mores cookies.

Britton experienced his very first backyard s’more just a few weeks ago. Was he a fan of the s’mores? Not really. Did he absolutely love the fire pit and burning marshmallows? Oh heck ya! And what can I say, he’s all boy! So there’s no denying the fire is one of the perks of eating s’mores. But I think I may have won him over (along with the rest of the family) with my s’more cookies. All of the s’more flavor but without smelling like a campfire!

Shhh…It’s A Secret

Wanna know the ‘secret’ ingredient in this recipe? So basically, any type of graham cracker will work fine. But if you really want to take these s’mores cookies up to AN AMAZING LEVEL, you must use the cinnamon graham crackers. You will be amazed how much that little hint of cinnamon can add to the flavor of the cookie.

Another added bonus of the graham crackers is they keep the cookies soft — even days later. I say days because these cookies were all gone in two days flat. That’s a record friends!

No Substituting These

Next, we have to talk about those marshmallows. Yes, there are mini marshmallows in some of the shots but those are only for the photos. No, I did not bake with them. Mini marshmallows will not work in this recipe. In other words, please don’t use them!

You will need dehydrated marshmallows or marshmallow bits. However, they may take a little work to find but believe me — it’s totally worth the extra effort. I found mine at Target but you can also find them on Amazon as well. So just be aware that before you can run into the kitchen and begin baking these fabulous s’mores cookies — you will need this one special ingredient. 🙂

Sticking with A Classic

Lastly, let’s talk chocolate. When it comes to the chocolate in this cookie, you could use chips. But I wanted to keep these s’mores cookies as close to the traditional recipe as possible. So of course, for my chocolate only those classic Hershey bars would do. I just chopped a few up (or five!) and then tossed them into the mix. Totally the best decision ever! And I love how you can even see the word ‘Hersey’ on some of the cookies.

S'mores Cookies - The Best Summer Treat

Prep Time: 20 minutes
Cook Time: 10 minutes
Total Time: 30 minutes

Ingredients

Instructions

  1. Preheat the oven to 350 degrees F. Line baking sheets with parchment paper. Set aside.
  2. Using an electric stand mixer fitted with the paddle attachment or in a bowl with a handheld electric mixer, add the butter, brown sugar, granulated sugar, baking soda, and salt. Mix together until very light and creamy, 2-3 minutes, scraping down the sides of the bowl as needed.
  3. Add the eggs and vanilla and mix until evenly combined.
  4. Next, add the flour and cinnamon graham cracker crumbs and mix until just barely combined.
  5. Now add the Hershey chunks and marshmallow bits and mix until incorporated.
  6. Scoop the dough by heaping tablespoons onto the prepared baking sheets, spacing at least 2-inches apart.
  7. Bake for 9-11 minutes until just golden on the edges and a little crackly on top. Let the cookies sit for a few minutes on the baking sheet before removing to a wire rack to cool completely.

Notes

And about those marshmallow bits, they are not the same as mini marshmallows! You need basically dehydrated marshmallows. They should be pretty easy to find. They're often located right by the other marshmallows in the grocery store or by the hot chocolate. I've also found them on Amazon HERE and at Target as well HERE.
