Slow Cooker Sunday: Sausage and White Bean Ragout

Cook Time: 3 hours on high or 6 hours on low

1 pound ground Italian sausage
4 stalks celery
1 green bell pepper
1/2 32-ounce jar prepared chunky marinara sauce
1 14.5-ounce can diced tomatoes, drained
1 cup beef broth
2 teaspoons garlic, minced
1 teaspoon Italian seasoning
2 15.5-ounce cans cannellini beans, rinsed and drained
1) In a large skillet over medium to high heat, cook sausage, breaking apart and turning occasionally until browned on all sides, about 6-8 minutes.
2) While sausage is cooking, coarsely chop celery and green pepper.
3) Drain sausage and transfer to slow cooker. Add marinara sauce, celery, green pepper, tomatoes, broth, garlic, Italian seasoning, and beans. Stir to combine. Cover and cook for 3 hours on high or 6 hours on low.
