Slow Cooker Sunday: Gourmet Chicken Chili


I love this chili….it’s a nice twist on your usual chili. Add a little cheddar cheese, top it with some sour cream and don’t forget a warm heart-shaped corn muffin. Delish!

Prep Time: 10 minutes
Cook Time: 5-6 hours

1 pound boneless chicken breast
1 white onion, chopped
2 teaspoons, garlic minced
1 3/4 cups chicken broth
1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon dried oregano 
1 teaspoon coarse salt
2 15-ounce cans of Northern beans, rinsed and drained
1 11-ounce can Shoepeg corn, drained
3 tablespoons lime juice

1) In a slow cooker cooker, mix together the onion, garlic, chicken broth, cumin, chili powder, oregano and salt. Add the chicken.

2) Cover and cook on low for 5-6 hours.

3) Remove the chicken from the slow cooker and using two forks, shred into pieces. Return the chicken to the slow cooker and add the beans, corn and lime juice. Cover and cook on high for 10 minutes or until the beans and corn are hot. Serve immediately….and enjoy!
