Penne with Tomatoes and Swiss Chard
This was requested by one of my favorite readers, so here ya go!! Enjoy!!
Prep and cook time: 30 min.
Serves 4
2 tablespoons olive oil
6 garlic clove(s), minced
2 leeks, quartered lengthwise, rinsed well and chopped
4 tomatoes, coarsly chopped, with juices
2 tablespoons fresh oregano, chopped
coarse salt and freshly ground pepper, to taste
1/4 teaspoon crushed red pepper flakes
12 ounces penne pasta
1 bunch Swiss chard, tough ribs trimmed and coarsely chopped
1) In large deep skillet, heat oil over medium heat. Add garlic and leek(s) and cook, stirring occasionally, until leek is softened, and 5 minutes.
2) Stir in tomatoes, oregano, salt and pepper, to taste and crushed red pepper. Reduce heat to low, cover and cook, stirring occasionally, until mixture is slightly thickened, about 15 minutes.
3) Meanwhile, bring large pot of salted water to a boil. Add pasta and Swiss chard, stirring to prevent sticking. Cook, stirring occasionally, until pasta is just tender, about 10 minutes. Drain well.
4) Stir pasta and chard into tomato mixture; season to taste with salt and pepper. Cover and cook, stirring occasionally, until flavors have blended, about 3 minutes. Adjust seasonings to taste and serve hot.
