 Hey there and a very happy Tuesday to you!
I’ve been lovin’ the past few days in Colorado because it has been “Spring” beautiful!
Warm sunny days with cool, clear nights. Just gorgeous!
Dare I say, it’s starting to feel like ice cream season again. Oh ya!
(Well technically, I could eat ice cream in a -20 degree blizzard.)
Now that warmer days are here I decided to surprise my little man
with an afternoon sweet treat.
My Gluten-Free Chocolate Chip Cookie Ice Cream Sandwiches 
may have a super long name but they are packed full of awesomeness!
You’re going to love them because 
they’re the perfect treat to welcome ice cream back into your life.

 
On Sunday, that’s just what little man and I did.
 I grabbed him and he grabbed our ice cream sandwiches.
We parked ourselves on a little bench to enjoy our treats in the Spring sunshine.


Now I’m not going to brag but I did hear lots of,
“Oh. Man. That’s good.”
“Mommy. This is a great ice cream sandwich.”
(Ok. I am bragging. I couldn’t resist.)

I’ll tell ya, I scarfed mine right down, loving every bite.
Little man took longer to enjoy his treat which means
he ended up with a gooey mess. 
Some kids may like the sticky fingers, however my kid…not so much. 

Being the awesome mom I am,
 I was totally prepared to handle that mess with my Wet-Nap wipes.
I had purchased them a couple of days ago at Walmart.
I’ve got to say, I like shopping there because of their everyday low prices.
Who doesn’t like saving money right?! 🙂

 

 So before I could even hand him the container, I heard…
“My hands are so messy. I need to clean them, Mom”.
 And then he decided it was time to take action!


  I don’t know what he enjoyed more…the eating or the cleaning! 🙂
Bye bye, gooey ice cream fingers. Hello, clean smiling little man!


I plan on keeping a container of wipes 
with me at home and in the car, at least until the end of summer.
You never know when the sticky treat craving will strike.
Everyone needs an easy clean up!
 Speaking of sweet treats,

Recipe: Gluten-Free Chocolate Chip Cookie Ice Cream Sandwiches
Prep Time: 10 minutes Cook Time: 10 minutes

Ingredients:

  • 2 1/2 cups blanched almond flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking soda
  • 10 tablespoons butter, melted
  • 1 tablespoon vanilla extract
  • 1/2 cup honey
  • 1 cup chocolate chips
  • vanilla ice cream

Directions:

1) Preheat your oven to 350 degrees.

2) Combine all dry ingredients (flour through soda) in a large bowl.

3) Mix wet ingredients (butter through honey) in a smaller bowl.

4) Combine the wet ingredients into the dry. Add your chocolate chips.

5) Form into one-inch balls and place on a parchment paper lined cookie sheet.

6) Bake at 350 degrees for 7-10 minutes.

7) Remove from oven and allow to cool on cook sheet for two minutes. Then gently lift parchment paper (with cookies on top) and place on a wire rack to cool.

8) Using a kitchen scoop, take one scoop of ice cream onto the flat side of the cookie, then top with second cookie.

9) Gently press together to allow the ice cream to spread slightly. 

10) Wrap individually in plastic and freeze until the ice cream is very firm, at least 4 hours.

Makes approximately 12 cookie sandwiches
