Egg-Salad Sandwiches
I know we all have tons of eggs to eat after Easter and this is one of my favorite ways to eat them up! Enjoy!
Prep Time: 10 min.
6 hard boiled eggs, peeled and roughly chopped
1/4 cup mayonnaise
3/4 teaspoon Dijon mustard
3 tablespoons diced celery
3 tablespoons diced red onion
Salt and fresh ground pepper, to taste
2 cups fresh spinach
whole wheat bread
1. In a medium bowl, combine eggs, mayonnaise, mustard, celery, red onion, and salt and pepper to taste. Gently mix until combined.
2. Lay out your bread (toast first, if you like) then on the bottom slice lay your spinach and top with egg salad. Cover with top half and cut the sandwich into fourths. Serve immediately.
