A Week of Easy Breakfast Recipes + Healthy Snacks for Mom

It’s now officially August and the countdown to school is on! My son has about 18 days left of his summer vacation. Yikes! Where did the summer go?!

So if you are starting to think about back to school like I am, you may be searching for some new quick and easy breakfast options for your little ones. My Breakfast Burritos are perfect for hectic school mornings.

But I’m not stopping there. I’m going to give you a week of easy breakfasts recipes plus something just for moms. We often think of healthy after school snacks for the kiddos but what about mom? I have a great list of 20 healthy snacks that are all 150 calories or less! 🙂

First, let’s start with this easy Breakfast Burrito recipe. My son has never been a big breakfast eater, but there’s just something magical about these burritos. He will scarf one down in no time while other breakfasts can take him 15-20 minutes to finish. I like to make 12 at a time and then freeze them. Each burrito only takes about a minute to reheat so it’s a great grab-and-go breakfast! Every minute in the morning counts, right moms? 🙂

I also love this recipe because its packed full of protein to start the morning right. And it keeps my little guy full until lunch time.

Easy Breakfast Burritos

Prep Time/Cook Time: 30 minutes (Makes 10 Burritos)

Ingredients:

  • 12 eggs
  • 1/4 cup milk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups cheese (I use cheddar)
  • 1o tortillas (burrito sized)
  • 1 box of frozen sausage (usually 10 count)
  • 1 bag frozen potato puffs/tater tots (I use Alexia)
  • Optional: 1 7oz. can green chili
  • Optional: salsa

Directions:

Preheat your oven to desired temperature for frozen potatoes. Place potatoes in oven and while those are cooking, start on the eggs.

In a large bowl, beat your eggs, milk, salt and pepper together. Next place your sausages in a large skillet on low to medium heat. Once those are cooked, remove from skillet and then pour in your eggs to cook. Cook, stirring occasionally, until eggs are set. Dice your sausage. Now it’s time to assemble the burritos.

Warm your tortillas in the microwave between wet paper towels for 30 seconds. Then layer in the following order: cheese, eggs, potatoes sausage, and a sprinkle of green chili if desired. Then fold your burrito closed. Top with cheese and salsa, then microwave for 30 seconds. Serve warm.

To Freeze: Wrap folded burrito in paper towel then in sheet of foil. Seal tightly and place in freezer bags. When bag is full, remove all air and freeze. To serve: remove foil and put paper-towel-wrapped burrito in the microwave. Then reheat for about one minute.
