When we go out for breakfast – which isn’t often with our busy schedules – I pretty much always order the same thing. Avocado toast with eggs (scrambled on the side). Chris often teases me because he says I could order the most lavish, hard to make breakfast. And instead I order something I could easily make at home in a matter of mere minutes. What can I say, I love it!
I know avocado toast has been a popular healthy breakfast option for awhile now. But did you know that adding an egg will make it even healthier?! Let me share with you all the reasons why I love this healthy duo and how to make this yummy breakfast you see here too!
Is Avocado Toast Healthy?
Yes! And here’s why. There are numerous health benefits. Replacing artery-clogging saturated fat with the “good” monounsaturated fat found in avocados is recommended by the American Heart Association. And unsaturated fats (found in avocados) can help reduce the risk of a heart attack or stroke.
Avocados are also brimming with nutrients, including two carotenoids called lutein and zeaxanthin. Both lutein and zeaxanthin have been found in high concentrations in the macula, the area of the retina in the eye that gives you sharpness in your eyesight so you can read. So eating avocado toast a couple times a week could help slow the progress of macular degeneration, which is the leading cause of vision loss as we get older.
Those health benefits alone are great! But what if we add an egg to the avocado toast?
Why Should I Add An Egg To Avocado Toast?
There are so many more health benefits you can receive from avocado toast by just adding an egg! The combination of eggs and avocado ensures a whole range of properties essential to protecting brain cells. “The ‘good’ fats, which we know avocado is rich in, keep neurons healthy. They also help to metabolize glucose and promote brain activity.
Eating eggs together with avocado promotes the synthesis of stress-reducing hormones. You’ll also get vitamin D and B-complex vitamins, which help combat anxiety, irritability and depression. See – I knew there was a reason why avocado toast with eggs makes me so happy! 🙂
Eggs combined with avocado is also an excellent way to fight aging. This food combination contains vitamin C which promotes the synthesis of collagen and vitamin A, in the form of retinol and beta-carotene, which protects the skin from oxidative stress damage.
So now that you know how healthy this breakfast choice is, let’s talk about how easy it is to make!
Is Avocado Toast Easy To Make?
Do you have 10 minutes? That’s all the time you will need to make this super easy and oh so tasty breakfast or snack!
Now you may be thinking, ‘But the egg in your breakfast are in the shape of a flower. Isn’t that hard to do?’ Nope. Super simple – let me show you how I did it.
How To Make The Best Avocado Toast With Eggs
There are a few tricks to creating this special avocado toast with a ‘flower’ egg. But it really requires no additional time. All you need is a flower shaped cookie cutter and some cooking spray. Or you can use an egg mold.
Did you even know egg molds were a thing? Let me tell you, when I started searching for molds, I found some super fun ones!

So start by making the avocado toast first. Toast the bread and then take half an avocado and smash it up in a bowl. I love to add a tiny squeeze of lemon onto the avocado as well. Then spread the avocado completely over the toast. Sprinkle with some Everything But The Bagel seasoning. Then set this aside while you fry the egg.
Next, here’s how to cook the flower egg. I’ve found the trick to getting the yolk as centered as possible in the cookie cutter is to first crack the egg into a small bowl. Then heat your pan and spray both the cookie cutter (inside) and pan with a touch of cooking spray. Place the cookie cutter in the middle of the pan and then gently pour your egg into the center of the cutter. Then just cook the egg to your desired liking. I cook mine until the yolk is almost hard.
Once the egg is cooked, gently place it onto the prepared avocado toast. If you like the flower look as I did, add a few leaves of basil and some chives (for the flower stem) to complete the look. I also garnished with a few grape tomatoes as well. Personally, I think they compliment the breakfast perfectly!

Best Avocado Toast with Egg Recipe

Ingredients
- 1 slice of whole wheat bread toasted (I used Ezekiel bread)
- 1/2 avocado (pit and skin removed)
- 1 egg
- cooking spray
- salt and pepper
- For garnish:
- Everything But The Bagel seasoning
- 2-4 basil leaves
- 3-4 whole chives
- 6-7 grape tomatoes
Instructions
In a small bowl, smash the avocado with the back of a fork until fairly smooth. Optional: add a little lemon juice and mix.
Spread avocado evenly over toast. Sprinkle with a touch of Everything But The Bagel seasoning. Set aside.
Heat a small nonstick skillet set over medium-high heat. Crack egg gently into a small bowl, taking care not to break the yolk.
Spray a little cooking spray in center of pan and on inside of cookie cutter. Place cookie cutter in middle of pan carefully pour the egg into the center of cookie cutter.
Cook until the whites of the egg are set, but the yolk is still slightly runny.
Place egg on top of prepared avocado toast. Garnish with basil for flower leaves, chives for stems. Finish with a few sliced grape tomatoes. Optional: sprinkle with salt and pepper if desired.
