When it’s hot outside, the last thing I want to do is to crank up the oven in our home to 450 degrees! So during the summer we try to prepare meals that don’t require any baking. And a good pasta salad is one of my summer go-to’s! So I had to share with you one of my favorites – this avocado, bacon, corn and tomato pasta salad.

The name of this pasta salad is a mouth full right?! So I’ve actually given this pasta salad a cute little nickname – I like to call it the ABC and T salad. And really, creating this salad is rather elementary. So the name works for several reasons. 🙂

I have to say, there’s no one star of this dish – well, maybe except for the cheeses! Because there’s actually two kinds in this dish – sharp cheddar and parmesan. And they both work together beautifully to compliment all the other ingredients!

Nothing says summer food like fresh basil and tomatoes! And I’m pretty sure the next time I make this, I’m going to add even more basil. I just don’t think you can go wrong with too much basil. So if your garden is over flowing with basil right now – this is a great dish to let those wonderful herb flavors standout!

A Little Side Note

Just so you know, for this recipe I actually used turkey bacon because our family is a big fan. But if you prefer the real deal – I’m like almost certain that real bacon will work just fine in this summer salad.

And I promise you, there is corn in this dish! When I went to buy my corn cobs, all the store had was a light-whiter corn. So the contrast is not as striking (bummer) but the salad still tastes fantastic (yea!). If you can find a darker yellow corn, the dish will look even prettier! 🙂

Easy Summer Avocado, Bacon, Corn and Tomato Pasta Salad

Yield: 6 Servings

Ingredients

  • 1 pound short cut pasta
  • 1 cup fresh basil, roughly chopped
  • 1 cup cubed sharp cheddar cheese
  • 1/3 cup extra virgin olive oil
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon fresh chopped chives
  • 1 pinch (each) kosher salt and pepper
  • 4 slices bacon, chopped
  • 4 ears grilled or steamed corn, kernels removed from the cobb
  • 2 cups cherry tomatoes, halved
  • 1 avocado, diced

Instructions

    1. Bring a large pot of salted water to a boil. Boil the pasta to al dente, according to package directions. Drain.
    2. Meanwhile, cook the bacon in a large skillet over medium heat until crisp. Drain onto a paper towel.
    3. Next, add the basil, olive oil, cheddar, parmesan, lemon juice, chives, salt, and pepper to a large serving bowl. Add the hot pasta and toss vigorously to combine. 
    3. Add the corn, and tomatoes, tossing to combine. Top the pasta with avocado and chopped bacon. Season with freshly cracked pepper and salt.
