Mint Cookies and Cream Popsicles
Summer is here! So dust off that Popsicle mold and start enjoying some sweet homemade treats like these Mint Cookies and Cream Popsicles!
My boys love Oreo’s — like beg me to buy them a bag almost every time we go grocery shopping. Since we try to keep our diets rather healthy, I don’t purchase them very often. But when I told them I was making some homemade Oreo popsicles, I’m pretty sure I blew their minds! They had to be thinking, “Wha… What? Who is this lady? She can’t be our Mom?”
But heck, it’s summer. It’s the time to break a few rules, be a little lazy and indulge in some sweet, glorious Mint Cookies and Cream popsicles.
Popsicles recipes don’t need to be complicated. I say, just take a look around your kitchen and get creative. When I was creating this recipe, I originally was only going to use vanilla ice cream and Oreo’s.
But then I stopped and asked myself, “What’s my favorite ice cream?” Mint chocolate chip is this lady’s go-to. So, why not combine that with the Oreo’s? It’s still only two ingredients, which keeps the recipe simple but packed with even more flavor!
So I gathered up my ingredients and grabbed my popsicle mold and prepared to show my boys how to make the yummiest summer treat.
While my ice cream was softening, I started crumbling up some cookies. We all know the cookie is the absolute best part of cookies and cream ice cream. Am I right? 😉 So then I paused and thought, why stop there? I’m going to put a whole Oreo inside each popsicle mold as well!
Now at this point, my boys who have been watching are going into complete shock with all the Oreo magic happening in this kitchen. It’s a like a dream come true!
I don’t blame them. It’s like so much goodness crammed into one little mold! After some freezer time, we all got to try a popsicle. No complaints. Not one. Actually there was no talking at all because everyone was to busy devouring. And right here is how I just became Mom of the year. 😉

Mint Cookies and Cream Popsicles
Ingredients
- 20 Oreo's
- 3 cups mint chocolate chip ice cream
Instructions

Scoop out three cups of mint chocolate chip ice cream into a mixing bowl. Set aside to melt slightly.

Place 10 Oreo's in Ziploc bag and crush with rolling pin. Crumble to desired size.

Mix the crumbled cookies into the ice cream and stir to combine.

Scoop s small amount of the ice cream mixture into the bottom of 10
popsicle molds. (about 1/3 of the way). -
Insert a whole cookie into into each of the molds.

Fill the mold with the rest of the ice cream mixture.

Place the lid on the molds and insert the wooden popsicle sticks into each mold.

Freeze until solid - about 5-6 hours.

Remove the popsicles by filling your sink with hot water, and immerse the mold up to, but not over the top lip and hold for 15 seconds. Remove from the water and then gently remove the popsicles.

To store for later, wrap each popsicle well with waxed paper, and then put in freezer baggies.
Yum! I love mint ice cream too so this really does sound like heaven.
