Angel Hair With Walnut Pesto
Prep and Cook Time: 35 minutes
4 cups fresh basil
2/3 cup olive oil
2 garlic clove(s), quartered
1/2 teaspoon salt
1/2 cup chopped walnuts, crushed
1/2 cup Parmasean cheese
salt and pepper to taste
16 ounces angel hair pasta
1. In a food processor, combine the basil, oil, garlic, and salt. Cover and process until the mixture comes together, then process a little longer or until everything is finely chopped.
2. Scrape down the side of the processor and add the walnuts and Parmsean cheese. Process until pesto is smooth. Season to taste with salt and pepper.
3. Meanwhile, cook the pasta in a large pot of salted boiling water until cooked through but still firm to the bite. Drain and reserve 1/4 of the cooking water. Return the pasta to the pot.
4. Add pesto to the hot pasta, toss until well coated. Transfer to a serving bowl and sprinkle with extra Parmasean cheese. Enjoy!
