Gluten-Free Almond Heart Cookies

Hi there my lovelies! I have a sweet treat for you today!
Valentine’s Day is only a couple of weeks away and I wanted
to give my sweetie a cookie treat that he could really enjoy.
I decided to test my cooking skills by whipping up this “gluten-free batch of goodness”. 

For my man, these almond treats are perfect. 
He loves cookies and he loves almonds. But he can not eat gluten.
So this recipe is like a match made in cookie Valentine heaven! 
The light gluten-free almond flour combined with some great ingredients 
like sugar, butter and a dash of cinnamon 
make this a cookie a winner that he will be begging me to make. 

Gluten-Free Almond Heart Cookies

You will need:

-1 1/2 cup blanched almond flour
-1/2 cup whole almonds
-1/4 teaspoon salt
-1/4 teaspoon ground cinnamon
-1 stick unsalted butter, softened
-1/2 cup confectioners’ sugar, plus more for dusting
-1 large egg yolk
-1/4 teaspoon almond extract

Step 1: In a food processor, pulse the almonds with the almond flour until nuts are finely ground. Add the salt and cinnamon; then pulse again to combine. 

Step 2: In the bowl of a stand mixer (with paddle attachment), beat together the butter and sugar on medium speed until smooth and fluffy. Add the egg yolk and almond extract and beat until combined. 

Step 3: Reduce the speed to low and gradually add in the flour mixture until just combined.

Step 4: Place your dough into the refrigerator for 10 minutes. Preheat your oven to 350 degrees. Roll a tablespoon-size portion of dough into a ball and place on parchment-lined baking sheets. 

Step 5: Bake until cookies are golden brown and crisp, about 17 minutes. Let cool completely on wire racks. Garnish with a dusting of confectioners’ sugar.

I gave my mister three cookies to “taste test”.
Let’s just say he ate more than three, or four, or five!
This recipe makes only about 18 cookies (which is probably a good thing!) 🙂
