Once fall arrives, my desire to bake increases tenfold. It’s so bad on my waistline but my boys love it. In the summer, they know better than to ask. But now that it’s fall, almost every night I get the question, “What’s for dessert?” One of my latest fall treats is my cinnamon sugar apple cake. My first born wanted to bake and I wanted cake. Does anyone see a problem with this?

Lucky for me, Sebastian has shown interest over the past few months in baking. Specifically wanting to make some muffins. Not cooking though…because that would be helpful to his mother. He’s totally not interested in that process. He just wants to bake sweet things like donuts, cookies, cakes, etc. Do I blame him? Not at all. Baking is the true joy of cooking for me too. 

So we were in Trader Joe’s and stumbled upon their Cinnamon Sugar Muffin Mix. I thought it looked tasty and was easy enough for him to make. So we get home and later that night I asked him if he wanted to make the muffins. His reply… “Na. Not interested now. I only want to make cakes.”

Great. So why did I buy this mix?! (insert mom eye roll here) So fast forward to a few weeks ago when the outside temps started to dip and I got the itch to bake. I opened up the kitchen cabinet and saw that muffin mix staring at me. I wasn’t craving muffins but cake sounded good. So I started to read the side of the box and to my surprise they included a recipe for coffee cake. Now we are getting somewhere.

But the recipe for the cake seemed like it was missing something — it needed some fall sweetness. I went back to my kitchen cabinet and dug around. I found a can of apple filling. From there everything just started to click. My recipe-making-brain thought, ‘What if I added some apple filling, raisins and a dash of vanilla to the mix? Bake it like a cake and then top it with ice cream?” OH, SWEET YES!

So did Sebastian ever make those muffins? Nope. But I made the easiest cinnamon sugar apple cake ever. It was an immediate hit with the whole family! So even though I created the recipe, I have to give him some credit because I would have never bought the mix without him. 

And when I say hit with the family, I mean like I’ve already made it three times kinda hit. My husband is asking me to ‘stock up’ on the items I need to make this just so we can’t ever run out. It’s that good.

The Easiest Cinnamon Sugar Apple Cake

Ingredients

  • 1 box Trader Joe’s Cinnamon Sugar Muffin’s Mix
  • 1 tbsp butter
  • 1 egg
  • 3/4 cup water
  • 1 can apple pie filling
  • 1 tsp vanilla extract
  • 1 cup raisins

Instructions

  1. Following instructions on box to make coffee cake; combine cinnamon sugar topping and 3 tbsp of baking mix into a small bowl. Mix well. Add butter and blend until mixture become crumbly. Refrigerate until ready to add to cake. 

  2. Preheat oven to 350 degrees. 

  3. Combine egg, water and baking mix. Then add apple pie filling, vanilla and raisins. Mix until combined. Pour into cake pan. 

  4. Sprinkle cinnamon sugar topping evenly over top of cake. Bake 28-32 minutes, or until toothpicks inserted in center comes out clean. Cool 10 minutes before slicing.
