I love a good mint dessert. When Girl Scouts come knocking with those sweet Thin Mints, it’s a happy day for this lady! My list of favorite mint treats doesn’t end with cookies. I practically lived on Junior Mint candies when I was working at a movie theater in college. When that mint craving comes calling, I have to answer. That’s why I love this recipe. One bite of my Double Mint Brownies and I’m in mint heaven.
Now that my hands are full with baby Britton, I have very little time to spend cooking in the kitchen. Dinner is hard. Dessert is impossible. But not with this simple recipe. All I need is 10 minutes and my secret ingredient to get the best mint brownies in town. That’s right, a box of of my favorite Junior Mint candies is what fills these dark chocolate brownies full of bursting mint flavor!
To make, I simply pour half the batter into a baking pan. Then top that with a layer of Junior Mints and cover with the remaining batter. Once the brownies are baked and cooled, it’s time for my second layer of mint goodness…Mint Chocolate Chip ice cream! I know sometimes I suggest ice cream as a topping but this time…I’m insisting. Trust me on this.

Double Mint Brownies
Prep Time: 10 minutes Cook Time: 45 minutes
- 1 Box of Brownie Mix
- 1 Box of Junior Mints
- Mint Chocolate Chip Ice Cream
Mix brownies according to box directions. Spread half the batter in a 9×9 greased baking pan. Arrange Junior Mints in a single layer over the batter. Spread the reserved batter over the Junior Mints. Bake at 350 for about 40 minutes or until brownies start to pull away from the sides. Cool completely in pan on wire rack. Cut into 9 squares. Serve with Mint Chocolate Chip ice cream.
