
An impressive looking dessert but amazingly simple to make! Celebrate your love of strawberries by combining them with a sweet layer of brownie topped with a no-bake vanilla cheesecake. This strawberry brownie cheesecake recipe is sure to be a family favorite!
Preheat over to 350° F. Grease a 9-inch round baking pan and line it with parchment paper.
Prepare the brownie mix, following instructions on the box.
Pour into greased pan and bake for about 30-35 minutes (check the directions on box). Let cool.
Beat cream cheese and sugar until smooth.
Add vanilla extract and beat until combined.
In a separate bowl, whip heavy whipping cream until it starts to thicken. Add the powdered sugar and whip until stiff peaks form.
Gently fold the cream cheese mixture into the whipped cream mixture.
Combine the strawberry pureed and water.
Combine the sugar and the cornstarch in a sauce pan. Stir in the strawberry puree.
Cook over medium heat, stirring constantly until the mixture thickens and comes to a boil.
Allow to boil for one minute. Then remove from heat and set aside to cool.
Line a 9-inch springform pan with parchment. Place the brownie into the pan.
Slice strawberries and line the side of the pan with the prettiest slices.
Top the brownie mixture with the cream cheese mixture. Make sure to fill in any grabs between the brownie and strawberries. Spread into a even layer.
Loosely cover and place in refrigerator until firm. About 4-5 hours.
Once firm, remove cheesecake from springform pan.
Top with halved strawberries and drizzle with strawberry sauce. Slice and serve!
