Summer is here! So dust off that Popsicle mold and start enjoying some sweet homemade treats like these Mint Cookies and Cream Popsicles!

Mint Cookies and Cream Popsicles

Servings 10 popsicles


  • 20 Oreo's
  • 3 cups mint chocolate chip ice cream


  1. Scoop out three cups of mint chocolate chip ice cream into a mixing bowl. Set aside to melt slightly.

  2. Place 10 Oreo's in Ziploc bag and crush with rolling pin. Crumble to desired size.

  3. Mix the crumbled cookies into the ice cream and stir to combine.

  4. Scoop s small amount of the ice cream mixture into the bottom of 10 popsicle molds. (about 1/3 of the way).

  5. Insert a whole cookie into into each of the molds.

  6. Fill the mold with the rest of the ice cream mixture.

  7. Place the lid on the molds and insert the wooden popsicle sticks into each mold.

  8. Freeze until solid - about 5-6 hours.

  9. Remove the popsicles by filling your sink with hot water, and immerse the mold up to, but not over the top lip and hold for 15 seconds. Remove from the water and then gently remove the popsicles.

  10. To store for later, wrap each popsicle well with waxed paper, and then put in freezer baggies.
